Oniyx Acosta (they, them) is a Dominican-American Sommelier in NYC. A native to the city, having grown up in a deli and restaurants run by their parents, Oniyx found joy in baking at 12 years old. Transitioning from pastry to coffee and studying beverages throughout their time at the Culinary Institute of America. Upon graduating in 2020 with a Culinary Science degree, they made a full transition into the wine industry.
After spending 3 years in Napa, California, working for Dalla Valle, Burgess, Bay Grape, and Scribe, and being inspired by DE&I work in the wine industry, they started their own collective (now a 501 (c) (3)) called Co-Fermented.
This is a non-profit events platform dedicated to representing queer wine professionals and underrepresented farmers and beverage makers through the ABV platform (Anything But Vinifera). If you are ever in NYC, catch them slinging bottles at Bridges or hosting wine events to celebrate underrepresented beverage makers!
